veggie and rice soup

i made some soup for dinner last night. i sauteed chopped onions, carrots, and celery until the onions were clear, then added chicken broth and rice and boiled everything for about 20 minutes. then i added some frozen (fresh would be fine too, probably better) baby spinach at the end with a little salt and pepper to taste. it was very simple, but tasted yummy and healthy too...

sounds good! i love making soups like that and it's fun to play around with the various combinations of veggies and starch/proteins. sometimes i add miso paste or lemongrass paste or coconut cream to a chicken broth base to give the soup a different flavor. i like your idea of adding baby spinach at the end - have to try that.

thanks yall! robinde, those are great ideas for altering the flavors, i will give a try. i think lemongrass would have been very nice for the one i made yesterday...

that does sound yummy and healthy! i like how you added the spinach at the end. i am guessing so that it doesn't over cook and get brown and turn the soup green. i never though of mixing miso and chicken broth, but i might have to try that.
